Add castor sugar and brown sugar and beat until light and fluffy. This should take about 3-4 minutes. Add vanilla essence and mix until combined. - Add the flour to the butter-sugar mixture and mix well. The dough will be crumbly and sand-like. Fold in the chocolate chips. - Grease 4 aluminum shot glasses with butter and dust with flour. Put the dough into the greased shot glasses and press down & on the sides to form a 1/2 cm thick base and wall. Refrigerate for 30 mins. - Preheat oven to 180 C. Bake for 15-20 minutes. If the cookies puff up too much while baking, take it out and press gently with your finger. Do not touch the glass directly as it will be VERY hot! Let it cool. De-mould gently. - Pour melted chocolate into the cookie shots and swirl to coat the insides of the cookie. Refrigerate for 15 mins. - Fill with ice cream of your choice and top with strawberries.
